Welcome to Le Botaniste: a fine-dining restaurant guided by nature and its garden

Through the alley of lime trees, you will find a charming English garden, surrounding an 18th century manor house. Just like the menu of its restaurant, this garden – and its permaculture vegetable garden – changes with the seasons. From Lebanese cedar trees, Ginkgo biloba to giant Sequoia centenary trees, the garden is full of history and character. Wisteria and climbing ivy adorn the walls of the former stables while a variety of stunning ancient roses embellish the hotel grounds.

Once you step through the doors of the ancient manor house, you will be greeted by our lovely staff who will lead you to your table at Le Botaniste. You will soon notice that nature isn’t only celebrated in the menu but also in the décor. Herbariums adorn the walls, floral fabrics cover the chairs and dried flowers can be spotted in vases. The dining room itself is surrounded by bay windows offering diners a majestic view on the illuminated park with its centennial & exotic trees.

Didier Robin, Chef Director and Hugo Genty, Head Chef, only use local farmed produce from Normandy. Their concern for the environment and values for tradition mean that they only work with the region’s best farmers and favours locally sourced food for their organic ingredients.
Pastry Chef Simon Beauruelle creates decadent yet inventive desserts, making sure to always have a gluten, allergen-free or vegan option on his menu. 

The three chefs work closely together with the château’s market gardeners, as to fully utilise the harvest of the permaculture vegetable garden. This natural laboratory accommodates over 100 types of fruits, vegetables, flowers and aromatic herbs, as well as their subspecies resulting in imaginative and varied creations in the kitchen! Wishing to be more eco-friendly, the restaurant started serving guests honey made from its own hives in 2012. This honey is used in numerous dishes, as well as cocktails and is also available for purchase.
