Our barman Thibault Gosselin creates seasonal cocktails with herbs from our garden and honey from our beehives. He makes his own syrups, with our honey for instance, but also with figs, red peppers or other fruits and vegetables from our garden. He only works with local producers: cider and calvados farms, gin and vodka distilleries or even Norman Limoncello producers. 

Thibault is always inspired and is continuously working on the cocktail list. He particularly likes using old "forgotten" spirits as he calls them and likes to re-introduce ancient recipes of timeless cocktails.His menu features old French liquors like “La Madarine” for instance, which is made of Lillet blanc, Pampelle, Angostura orange bitter and Mandarine Napoleon. This exquisite, well-balanced blend of mandarins and refined 10-year-old aged cognac was actually created in the early 1800s for Napoleon himself! Gentiane and Chartreuse are also present in his creative concoctions. 

Guests can enjoy their drink in our different bar rooms and on our terrace whilst admiring our centennial trees. The bar is also open to those who only wish to have a drink.
